Fall + Football = Plant Based Food? Yes!

With football season attempting to be in full swing, game day food cravings are back. Whenever I think of watching the big game at home, buffalo flavored items always come to mind. They’re the perfect party snack and game day treat. I love figuring out how to make the healthiest version of classic comfort foods. My vegan buffalo cauliflower tacos will leave you light and content while still giving you the classic buffalo taste. The latest kitchen tool I’ve been obsessing over is the air fryer. Any food you put in it gets perfectly crispy without having to use oil. If you don’t have one, it’s totally okay, and an oven will work just fine. Here’s what you’ll need to make the tacos you won’t be able to put down: 

Buffalo Cauliflower: 

● ¾ cup almond flour (or flour of choice) 

● ¾ cup almond milk (or milk of choice) 

● 1 teaspoon of paprika 

● 1 teaspoon of garlic powder 

● ½ teaspoon of salt 

● ½ teaspoon of pepper 

● 1 large head cauliflower (cut into florets) 

● 3 tablespoons of coconut oil 

● ¾ cup of buffalo sauce 

After making the buffalo cauliflower, you’ll want to assemble your taco. I’ve suggested some things that go great with the cauliflower, but you can use whatever makes you the happiest! 

Suggested taco toppings: 

● Avocado 

● Red onion 

● Lime 

● Pico de gallo 

● Handful of romaine lettuce 

● Siete cassava flour tortillas 

Now let’s get these tacos made! 

● In a large bowl, combine flour, milk, paprika, garlic powder, salt and pepper. Stir until combined. 

● Place cauliflower florets in batter and toss until well coated. 

● In a separate bowl, melt coconut oil and combine with buffalo sauce. Set aside. 

For baking: 

● Preheat oven to 450 degrees and line a baking sheet with parchment paper. 

● Place battered cauliflower pieces on baking sheet in a single layer. Bake for 20 mins.

For air fryer: 

● Set air fryer to 390 degrees and bake for 10 mins. Flip florets over and bake for another 10 mins.

Once the buffalo cauliflower is done, load up your tacos and enjoy this healthy, crispy and satisfying treat for your gameday!
